Ingredients:
- Masoor dal (soaked): 1/2 cup
- Onion (chopped fine): 1
- Garlic (chopped fine): 1 tbsp
- Tomato puree: 150ml
- Vegetable stock: 500ml
- Spinach leaves: 1 cup
- Cumin powder: 1 tsp
- Turmeric powder: 1/4 tsp
- Garam masala: 1/2 tsp
- Fresh coriander: a handful

Method:
- Add chopped carrots, almonds, cashew nuts, and water to a pressure cooker. Cook until the carrots are soft (2-3 whistles).
- In a pot, sauté the bay leaf, onions, and garlic in desi ghee until soft and aromatic.
- Add tomato puree and cook it for a few minutes.
- Stir in cumin powder, turmeric, garam masala, and masoor dal. Mix well.
- Pour in vegetable stock and let the soup cook covered until the dal is tender.
