Lentil Soup

 

Warm up with a comforting and flavorful Lentil Soup, packed with nourishing ingredients and spices. This hearty soup is not only delicious but also rich in protein and nutrients, making it a perfect meal for any time of the day.

Ingredients:

  • Masoor dal (soaked): 1/2 cup
  • Onion (chopped fine): 1
  • Garlic (chopped fine): 1 tbsp
  • Tomato puree: 150ml
  • Vegetable stock: 500ml
  • Spinach leaves: 1 cup
  • Cumin powder: 1 tsp
  • Turmeric powder: 1/4 tsp
  • Garam masala: 1/2 tsp
  • Fresh coriander: a handful
  • Spinach leaves: 1 cup
  • Bay leaf: 1

Method:

  • Add chopped carrots, almonds, cashew nuts, and water to a pressure cooker. Cook until the carrots are soft (2-3 whistles).
  • In a pot, sauté the bay leaf, onions, and garlic in desi ghee until soft and aromatic.
  • Add tomato puree and cook it for a few minutes.
  • Stir in cumin powder, turmeric, garam masala, and masoor dal. Mix well.
  • Pour in vegetable stock and let the soup cook covered until the dal is tender.
  • Add spinach leaves and fresh coriander, and cook for an additional 5-7 minutes.
  • Serve hot and enjoy!
