Pumpkin Halwa Tart

 

Indulge in the delightful combination of rich pumpkin halwa and a crunchy tart base in this decadent Pumpkin Halwa Tart. A perfect fusion of flavors, this dessert is made with the sweetness of pumpkin, aromatic spices, and a smooth texture, topped with a touch of saffron and pumpkin seeds.

Ingredients:

  • Pumpkin (peeled and pureed): 250g
  • Ghee: 1 tbsp
  • Cinnamon powder: 1 tsp
  • Saffron strands: 5-8
  • Milk: 250ml
  • Honey: 4 tbsp (adjust as per taste)
  • Agar strips (soaked): 10g
  • Pumpkin seeds (for garnish)
  • Crushed graham crackers or digestive biscuits: 1 cup
  • Ghee: 3 tbsp

Method:

  • Sauté the pumpkin puree in ghee until it becomes dryish.
  • Add milk and mix well.
  • Stir in cinnamon powder, honey, and saffron strands.
  • Add the soaked and drained agar strips and cook until completely dissolved.
  • In the meantime, mix crushed crackers with ghee and press into a tart pan to form the base.
  • Pour the pumpkin mixture over the crust and refrigerate for 1 hour to set.
